Well-regarded local hospitality group seeking a Head Sushi Chef for a robust sushi program within new steakhouse opening in Dallas. We are seeking candidates with a strong background in high-volume culinary operations and a true passion for the art of sushi. The ideal chef will thrive in a fast-paced environment and bring creativity, expertise, and leadership to the table.


Responsibilities:


  • Collaborate closely with the entire restaurant staff to ensure seamless teamwork and exceptional guest experiences.
  • Oversee and manage all back-of-house (BOH) operations, including kitchen organization and cleanliness.
  • Evaluate staffing levels to meet service, operational, and financial goals.
  • Recruit, train, schedule, and evaluate the culinary team, working closely with the Executive Chef.
  • Uphold quality and consistency by adhering to standard recipes and directing the team accordingly.
  • Contribute to the development of new menu items and specials.
  • Maintain a vigilant eye on food freshness and quality.


Qualifications:


  • Minimum of 5 years sushi chef experience with at least 3 years as Head Sushi Chef.
  • Experience in high-volume and fine dining kitchens, generating at least $10mm in revenue.
  • Genuine passion for food and cooking.
  • Strong leadership skills and the ability to inspire and guide a team.
  • Hands-on approach to managing a sushi team.
  • Previous experience working with high-end Asian cuisine, sushi, and omakase.
  • Demonstrated ability to create sushi menus
