Executive Sous Chef | Upscale High Volume NYC

Salary: $75,000 – $85,000

The ESC is a creative and driven culinary leader. This role works directly with the Executive Chef to ensure smooth operation. The Executive Sous Chef should have excellent communication skills with in-depth knowledge of cooking methods, ingredients, equipment, and processes as well as experienced working in a fine-dine, technical-forward kitchen while being able to comfortably handle high-volume.


  • Assisting the Executive Chef with the preparation and planning of meal designs/menu
  • Ensuring that the kitchen operates in a timely manner
  • Monitoring and recording inventory
  • Ordering new supplies and food
  • Managing employees’ hours and scheduling
  • Providing support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating
  • Adhering to and implementing sanitation and safety regulations
  • Managing the kitchen team in the Executive Chef’s absence

Skills and Requirements:

  • 3 to 5+ years experience in a direct titled ESC, Sous, or Kitchen Management position
  • Fine Dining Experience
  • High Volume Experience is a must
  • Must have experience barbecuing¬†
  • Attention to detail
  • Motivated and self-directed
  • Pride in service and constant desire to grow within the craft
  • Tactful and clear communication
  • Excellent time management
  • A proactive and positive attitude
  • Teamwork-oriented with outstanding leadership abilities
  • Strong knowledge of various cooking methods, kitchen equipment, and best practices
  • Experienced using MS Office and restaurant software programs
  • Able to lift and carry up to 50 lbs
  • Able to stand and walk for extended periods of time
