
Executive Chef | Michelin Asian
"50 Best" list restaurant in Asia is seeking an Executive Chef to leading the culinary team. This is unique opportunity for a Michelin level individual to run one the best programs in China but also work in partnership with 3 Michelin Star Chef/Culinary Director. The Executive Chef will directly oversee all aspects of culinary programming & execution for this location set in a 5 star hotel. This position will be directly responsible for the performance and ongoing oversight of all Kitchen Management personnel to ensure the highest quality of execution and professionalism, with specific focus on mentorship and training. This position is ideally suited for a candidate with strong communication skills and high attention to detail. The Chef will work closely with Culinary Director while understanding and honoring his food philosophy.
Responsibilities
• Manage the team of sous chefs and chefs, ensuring the highest level of execution and professionalism, with specific focus on mentorship and teaching
• Place specific focus on the sourcing of the best local (Chinese) products.
• Oversight of the Financial performance of the restaurant to include all financial metrics, not limited to food cost, labor cost, controllables, and R&M
• Manage the maintenance and repairs of the kitchen spaces
• Work closely with G.M to ensure positive workplace culture.
• Work with marketing team to help promote Ensue and its numerous events and activations
• Maintain existing relationships with our clients & vendors
• Properly monitor & coordinate all staffing needs, identify staffing efficiencies and effectively manage all kitchen related labor costs
• Maintain & Ensure that all food prep & storage areas are clean and orderly and adhere to health and safety standards
• Monitor and manage of equipment and devices used for cooking including
• Oversee quality control for ingredients, finished products, and facilities
• Ensure that all food items are prepared as per standard recipes whilst maintaining portion control and minimizing waste.
Requirements
• Proven experience as a Chef, or relevant role
• Ability to impact knowledge into junior kitchen staff if such need arises
• Effective organization, communication, and leadership skills
• In-depth knowledge of sanitation principles, food preparation and cooking techniques/nutrition
• Strong attention to detail and ability to comfortably lead a team in a busy atmosphere
