Executive Chef – High Volume ($45mm)

Seeking a seasoned high volume Executive Chef for a multi-faceted dining destination in Disney Springs comprising 5 dining rooms and 2 outdoor spaces.

The Executive Chef will engage with all levels of culinary talent, inspire teams, and promote results by fostering an efficient BOH environment focused on consistency, innovation and excellence. The position is a blend of administrative oversight, development and training, and menu and operations fine-tuning. 

Ideal candidate will be have proven success running dynamic, high volume kitchens doing at least $40mm in sales (2,000 to 4,000 daily covers) and working with large teams in excess of 150 people. Experience within casinos and/or large resorts is preferred.


  • Exceptional cooking skills – tasting required
  • Strong leadership and coaching skills, must be able to bring up teams from line level to management
  • Must have proven success operating in high volume, fast-paced kitchen environments doing at least 2,000 daily covers.
  • A minimum of 5 years of proven success as a multi-unit leader, Property Chef or Corporate Chef in a high volume, scratch kitchen environment.
  • Ability to do theoretical costing around food, purchasing, and labor.
  • Must possess a strong financial acumen, command of the P&L and the ability to effectively interpret reporting.
  • Comprehensive understanding of properly yielding and writing recipes.
