Luxury food retail brand seeks an Executive Chef Manager to oversee all aspects of the culinary team of this jewel of a fine dining restaurant and luxury food retail brand. As Executive Chef you will bring consistency in food quality and operational practices to daily service through great leadership and teamwork. 

DESCRIPTION:

The Executive chef will lead and inspire the culinary team to deliver exceptional consistent food for super VIP guests. The Executive Chef is accountable for the overall food quality, food cost and BOH labor cost as well as for creating elevated seafood and ingredient driven menu items that highlight elevated California/French cuisine. 

The Executive Chef will be responsible for ensuring that the team is able to execute a set menu–designed by the original location’s chef–using fine dining techniques to deliver a luxury experience. The Executive Chef is the lead culinary operator of this location and will be:

  • Responsible for creating systems in the kitchen and lead them
  • Creating a positive work culture
  • Managing inventory, overseeing food cost and labor to budget
  • Overseeing all hiring, training and firing of culinary staff
  • Implement and maintain operational check lists including opening, closing, and mid-shift task lists.
  • Offering improvements and enhancements of culinary program to General Manager
  • Achieving company objectives in food quality, appearance, sanitation and cleanliness
  • Ensuring  food safety standards are rigorously applied.
  • Knowledgeable regarding personnel, and administer prompt, fair and consistent corrective action for all violations of company policies, rules and procedures.
  • Reporting workplace injuries to Worker’s Comp carrier immediately

REQUIREMENTS:

  • At least 2 years experience as an Executive Sous Chef or Exec Chef overseeing a fine dining culinary team
  • At least 2-3 years experience working in luxury hotels, private clubs, or Michelin/James Beard full service fine dining restaurant
  • Manager servsafe certification
  • Experience in New Restaurant Openings is a plus
