DESCRIPTION:
Established fine dining restaurant is searching for a Culinary Director with passion for local produce and regional cooking. The CD role will be very hands on: cooking different, delicious food items and will be responsible for creating the restaurant’s menu and adjusting it depending on the seasonality/availability of food.
REQUIREMENTS:
- 5+ years culinary background within fine dining, 3 years experience at CDC/EC level or above
- Multi-outlet experience preferred
- Culinary creativity with focus on seasonal, hyper-local produce
- Purchasing experience and local vendor relations
- Inventory control, menu, plate & labor costing
- Menu/recipe creation, maintenance and documentation, with daily staff education
- Experience leading a kitchen team of 10+ employees
- Thorough knowledge of food handling practices including a food protection certificate
- Strong leadership qualities with ability to motivate and coach a dynamic team
- Strong organization and communication skills
- Passion for success, and an uncompromising commitment to excellence
- Intermediate computer skills & knowledge

- Experience working in high volume, seasonal environment
- Strong financial acumen and proven results in driving sales and lowering food & labor costs
