Position Overview: We are seeking an experienced and passionate Beverage Director to curate an exceptional beverage program for our Fine Dining Kaiseki Restaurant and Rooftop Bar within our prestigious luxury hotel in New York City. The Beverage Director will play a pivotal role in creating a refined and innovative beverage experience that complements the culinary excellence of our restaurant and the sophisticated ambiance of our rooftop bar. The successful candidate will be responsible for overseeing all aspects of the beverage program, including curating the sake and wine list, managing inventory, and coordinating large format events.

Key Responsibilities:

  • Develop and execute a creative and diverse beverage program that aligns with the culinary concept of the Fine Dining Kaiseki restaurant and the upscale atmosphere of the Rooftop Bar.
  • Craft an extensive sake and wine list, showcasing 500-800 bottles, that reflects a deep understanding of global varietals, vintages, and pairings.
  • Collaborate closely with the culinary team to ensure seamless integration of beverages with the dining experience, enhancing the overall guest journey.
  • Establish and maintain relationships with suppliers, distributors, and producers to ensure a consistent supply of high-quality beverages.
  • Oversee the selection, purchasing, and inventory management of beverages, including building out opening inventory.
  • Create and implement training programs for staff to ensure a high level of knowledge and service expertise in beverages.
  • Plan and execute large format events, including private dinners, tastings, and special celebrations, ensuring flawless coordination and execution.
  • Monitor industry trends and innovations, recommending adjustments to the beverage program as needed to stay competitive and relevant.
  • Manage budgets, pricing strategies, and financial performance of the beverage program.

  • Beverage Expertise: In-depth knowledge of sake, wine, spirits, and craft cocktails, with a proven ability to curate a diverse and elevated beverage program.
  • Fine Dining Acumen: Understanding of fine dining protocols and the ability to align the beverage program with the restaurant's culinary philosophy.
  • Inventory Management: Experience in managing large beverage inventories, including forecasting, purchasing, and rotation.
  • Event Management: Proficiency in planning and executing large format events, coordinating logistics, and ensuring a high-quality guest experience.
  • Leadership: Strong leadership skills to inspire and guide a team of sommeliers, bartenders, and support staff.
  • Vendor Relationships: Established relationships within the beverage industry, including suppliers, distributors, and producers.
  • Creativity: Ability to create innovative and unique beverage offerings that resonate with guests and enhance their overall experience.
  • Communication: Excellent communication and presentation skills, with the ability to educate and engage both guests and staff.
  • Financial Acumen: Experience in budgeting, cost control, and pricing strategies to ensure profitability.
  • Attention to Detail: Keen eye for detail in all aspects of the beverage program, from presentation to service.
